How is the weight of the fabric? I'm looking to not die out in the heat of the afternoon at work this summer, and still have Long Pants to protect me.

These are all cotton, so even though they are heavy, they don't trap the heat the way stretchy material does. Also, because the legs are wide, they give my legs room to breathe. I bought them because I live in Florida, but I don't work outdoors, so I can't speak to that concern.

What it the inseam for a size 8? I'm 5'8" and need longs but can't seem to find them

The inseam of a size 8 is 32 inches (unwashed). Beware though that the waist of their size 8 is about 4 inches larger than advertised (33.5 inches instead of 29.5 inches). This might be smaller after washing, but it's a big discrepancy.
