What is the little valve looking thing on the side of the sauce pot? Is it to release pressure, steam, water, something?

it's to allow some steam and air pressure to escape the pot. it's basically a safety feature that prevents the pressure created by the steam and the boiling water from over-pressurizing the pot. without it at worst the lid would blow off the top or at best rattle around on top of it. but with it your food gets steamed and none of the problems already mentioned will happen unless it gets blocked in some way. hope this helped a little and as always, please have a good day.
