This is THE Pan!!!
This is the second black pan I've purchased from Hillside. I don't really see any difference between the FE-2712 and the HM-2712 (that I previously purchased). These pans are of the highest quality craftsmanship and well worth the money. If you're looking for a top quality pan, there's no need to look any further. Absolutely perfect for Chicago style pizzas! I seasoned it according to the directions from American Metalcraft. 1. Preheat oven to 400°. 2. Wash pan well. 3. Place pan in oven till completely dry. 4. Coat entire pan with lard, bacon grease or coconut oil (inside and outside of pan). 5. Place in oven upside down on top rack of oven with a drip pan on the bottom rack to catch the drips. 6. Bake for 15 minutes. 7. Remove and wipe off excess oil. 8. Let Cool. 9. Repeat 3 times.

You'll get a workout with this monster!!!
The descriptions says this is a steel pan in one section and aluminum in another. This is a steel pan as a magnet will stick to it. As others have said it's heavy! It took a few days prior to making anything as I wanted to season the pan. Made a deep dish pizza and the total weight going into the oven was just under 10 pounds!!! I want one more of these!

Hillside metalware pizza pan
I've been making pizza for decades with and without pans in all kinds of ovens, and this is the best pan I've tried. Believe it or not, you want a BLACK pan, because its heat absorption helps crisp up the pizza. Pizza in this one comes out crisp, never soggy, and cooks a minute or two faster as a bonus. Although this is not a Teflon pan, it cleans up as easily as one of those, and your pizza WILL NOT STICK to it. Crank your oven up to its hottest setting, 500+ degrees, and press your pizza dough into this pan. Dress the pie with your toppings and slide it into the oven. Your pizza will be done in 12 to 14 minutes It will be much, much better than takeout. You can't go wrong with this sturdy, well designed pan.
